What are food colors?

You can use food coloring during baking for coloring, decorating or labeling, among other things. Oil-based food coloring

If colors are made on an oil basis, these liquid color pigments are very suitable for coloring buttercream or other doughs that have a high fat content. You can incorporate the colors very well and the taste does not change due to the slightly increased oil content. In addition to fillings and creams, you can also use these colors to color chocolate. If you want to meet a rainbow after cutting a cake, oil-based food coloring is a good basis for creative baking.

The gel is easy to dose, so that you can get certain color nuances the same way the next time. In addition to intensive colors such as blue, red or green, pastel shades and metallic colors are also popular with hobby bakers. Color pastes can have a very similar consistency to color gels. The color pigments are also very concentrated in the pastes, so even small amounts can be enough to color marzipan, fondant or dough. You should therefore act sparingly when trying out a new product so that the color is not too intense. Pastes are also available in numerous shades, which are ideal for modeling lifelike marzipan flowers or fondant petals.

Food coloring, which consists of a powder, is used to create shading with a brush or to set decorative accents. The powder can also be mixed with alcohol and it can then be painted on the baked goods like with watercolors. The economical dosage is also the key to success here. Powdered food coloring is also perfect for working with cookie stencils. To do this, apply a thin layer of edible glue to your pastry, place the stencil on top and then dab the colored powder onto the stencil with a brush. Make sure that you really only dab at the beginning and don't paint, otherwise the paint will run under the stencil.
